HoneyRock Pizza Dough

This is a great way to spend some time together in the kitchen: pizza from scratch. It can also clean out the fridge and pantry of some "odds-n-ends" ingredients for toppings. Can of diced pineapple you're not sure how to use? Deli-meat in the fridge? Leftover veggies? Get creative and throw 'em on this dough!

Time: 20 active, 45-60 for the dough to rise / 10-14 minutes in the oven
Oven Temp: 450 degrees
Ingredients: water, dry active yeast, sugar, salt, oil, high gluten or all purpose flour, cornmeal, olive oil + spices/toppings

For One 12-inch Pizza Crust

1 cup Water (90-110 degrees F)
2 tsp Dry Active Yeast
t tsp Salt
2 tablespoons Olive Oil
3 cups  High Gluten Flour (All-Purpose can also work) 
2 and 1/8 Cups Flour
as needed Cornmeal
as needed Olive Oil

 Instructions

You have two options to knead:

Using a stand mixer, place water, oil, salt and yeast in the mixing bowl.  Mix and let stand for 5 minutes. Add the flour.  Place the bowl on the mixer and using the dough hook, begin mixing on a low to medium speed. Once the dough forms a ball lower the speed to 1-2 and mix for 6-8 minutes until the dough is elastic and smooth. 

Don't have a stand mixer? Use a hand mixer until it's well mixed, until the dough forms a ball. Then, knead the dough by hand until it's elastic and smooth.

Once kneaded, cover the dough and allow it to rise in a warm place for 45-60 minutes until double. 

Punch down the dough to remove the air. Roll the dough to your desired thickness and size/shape. You can press this into a square or rectangle pan or roll a traditional circle.  Sprinkle cornmeal under the dough to prevent sticking to whatever pan you use.

Once rolled, brush the top surface with a light coat of olive oil.

Now, get creative! Get your pizza sauce and toppings and decorate that dough. HoneyRock keeps it pretty typical with the toppings, but we've listed additional ideas below.

Bake at 450* Fahrenheit for 10-14 minutes or until golden brown.

HoneyRock Banana Bread

Now here's a way to serve your neighbor: bake some banana bread and deliver it to their doorstep! Make sure to wash your hands thoroughly and keep them away from your face while baking. 

Time: 15 minutes to prep / 50 minutes to bake
Oven Temp: 350 degrees
Ingredients: flour, baking powder, baking soda, cinnamon, salt, eggs, mashed bananas, sugar, oil, optional additions

For Four Loaves of Banana Bread:

Ingredients:
1 C. Margarine
1 1/2 C. White Sugar
1 1/2 C. Brown Sugar
2 Large Whole Eggs
1 tsp. Kosher Salt
2 tsp. Vanilla Extract
 
3 C. Mashed Ripe Bananas
1 C. Sour Lemon Milk
(*The day before place 1 C. of whole milk with 1 T. fresh lemon juice. Cover and let this stand overnight to be used in this recipe.)
 
5 C. All-Purpose Flour
3 tsp. Baking Powder
2 tsp. Baking Soda
 
Directions:
  1. Preheat your oven to 350 degrees.
  2. In one bowl mix together the flour, baking powder and baking soda.
  3. Blend margarine, both sugars, vanilla and salt with the paddle attachment until creamy.  Change to low speed and add eggs, one at a time, mix for 2-3 minutes more. 
  4. Slowly mix in the mashed bananas and sour lemon milk, mix to combine. 
  5. Slowly add the flour mixture and stir until thoroughly combined.
  6. Evenly divide this batter into four loaf size baking pans (we used 8x4x2)
  7. Place in a 350-degree oven and bake for 50 minutes.  Check doneness by inserting a wooden toothpick into the center, it is done when the toothpick comes out clean.
  8. Cool completely before storing in your refrigerator or freezer.

HoneyRock Oatmeal Bake

There are two kinds of people in the world: those who love oatmeal bake and those who...do not. We've found there tends to not be many in the middle. If your campers are oatmeal bake fans, this is for them!

Time: 15 minutes to prep / 45 to bake / 15 to rest
Oven Temp: 375 degrees (325 if a convection oven)
Ingredients: oatmeal, sugar, salt,  baking powder, eggs, oil, milk, vanilla extract

For One 8.5 x 11in Casserole Dish of Oatmeal Bake

Dry Ingredients
4 cups Oatmeal
1/2 cup Brown Sugar
1 teaspoon Salt
2 teaspoons Baking Powder
Wet Ingredients 
4 Eggs
1/3 cup Oil
1 1/2 cups Water
1 tablespoon Vanilla Extract

Instructions

Pre-heat your oven to 375 degrees, 325 if you use a convection oven.  Grease your 8.5x11 baking dish.  Glass baking dishes work best, but you can use other types as well. 

Using two mixing bowls, combine wet ingredients and dry ingredients separately. Keeping separate, mix each thoroughly. Once each bowl thoroughly mixed, combine the wet and dry ingredients together. Let the ingredients stand for 30 minutes to allow the oats to begin soaking up the wet ingredients.

After allowing the ingredients to stand, mix again and pour into the baking dish.  Place in the center of your oven and bake for 25 minutes.  Rotate the pan and cook for 20 minutes more.  The oatmeal bake will be done when firm to the touch and golden brown on the top and “cake like”. 

Remove from the oven when done and let this stand for 15 minutes before cutting and serving.  Serve with bowls of vanilla-flavored yogurt and apple sauce.  That is the HoneyRock style we recommend!  You can also serve this with dried fruit or fresh/frozen berries.  If you use frozen berries, thaw to room temperature before serving.  Another good topping is cinnamon sugar.      


HoneyRock Chocolate Chip Cookies

A timeless classic: the chocolate chip cookies. They need no introduction...

Time: 20 minutes to mix / 12 minutes in oven
Ingredients: all-purpose flour, baking soda, margarine, packed brown sugar, white sugar, vanilla extract

4 cups all-purpose flour
2 tablespoons baking soda
1 3/4 cup margarine
1 cup packed brown sugar
1 cup white sugar
2 teaspoons vanilla extract
3/4 teaspoons salt
3 large eggs
2 cups semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350 degrees.
  2. In a separate bowl, mix together the flour and baking soda. Blend together and set aside.  
  3. Blend margarine, both sugars, vanilla, and salt until creamy. Change to low speed and add eggs, one at a time, mix for 2-3 minutes more.  
  4. Slowly add the flour mixture until completely combined. Turn off mixer.
  5. Add chocolate chips and stir on low until combined.  
  6. Place 1.5 oz balls of dough on a baking sheet with parchment paper or a silicone baking mat.
  7. Place the cookie dough in your pre-heated 350-degree oven for 12 minutes.  After 12 minutes rotate the pan and bake for 4 additional minutes.
  8. Allow the cookies to cool completely before storing.

HoneyRock Graham Cornbread

Alright everybody, hold on tight. This is one of the more complicated recipes we're going to put out there but the result is worth it. Everyone comments on this cornbread...slightly sweet, pleasantly moist, and a perfect combo to chili or drizzled with honey.

Time: 15 minutes to prep / 45 minutes to bake
Oven Temp: 300 degrees
Ingredients: buttermilk, cornmeal, margarine, sugar, eggs, graham cracker crumbs, flour, baking powder, baking soda, salt

*Don't have buttermilk? Add 1T lemon juice OR white vinegar to 1 cup of milk, stir, and voila! A buttermilk substitute.

3/4 cup Buttermilk
1 cup Cornmeal
1 stick Butter
1/2 cup Sugar
1 Egg
1 cup Graham Cracker Crumbs
1/2 cup Flour
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1/2 teaspoon Salt
1 cup Buttermilk

Instructions

Stir together 3/4 cups buttermilk with cornmeal and set aside.

Cream butter and sugar until fluffy and then beat in the eggs. Stir together the dry ingredients in a separate bowl (graham cracker crumbs, flour, baking powder, baking soda, and salt) and add to the creamed mixture alternately in thirds with the additional 1 cup of buttermilk. So, it'll go like this:

  • 1/3 of dry ingredients
  • 1/2 cup of buttermilk
  • 1/3 of dry ingredients
  • 1/2 cup of buttermilk
  • final 1/3 of dry ingredients

After that little tricky step, add the remaining buttermilk/cornmeal mixture. Once combined, add it to a greased casserole dish. Bake at 300 degrees for about 45 minutes. Not sure if it's done? Stick a toothpick in the middle of the pan. If it comes out clean, you're good to serve!
